Aloha Coleslaw with a Punch

Colorful and sweet, this unusual cabbage coleslaw boasts bits of pineapple and carrot in a creamy base.

Step: 1

Blend cabbage and carrot in a high-powered blender (such as Vitamix®) on low to medium-low speed until evenly shredded; strain and let sit until dry.

Step: 2

Combine cabbage mixture, pineapple, mayonnaise, almonds, raisins, dried cranberries, apple cider vinegar, and salt in a bowl. Refrigerate until chilled, at least 1 hour.
