Edamame and Cashew Coleslaw

A delicious non-mayo cole slaw with an Asian twist! Great for cook outs and summer time!

INGRIDIENT

Step: 1

Bring a large pot of lightly salted water to a boil over high heat. Add edamame and simmer until tender about 5 minutes; drain. Let stand for 5 minutes.

Step: 2

Whisk together orange juice, lime juice, olive oil, raspberry vinaigrette, salt, and pepper in a bowl.

Step: 3

Place coleslaw mix, green onion, cashews, and edamame in a large bowl. Toss lightly with the orange juice mixture to serve.
