Tuesday Night Quick Salad

Need a quick salad for a weeknight after getting home late from work? Try this! It’s easy to vary. I served with a baked potato that I cooked in the microwave (and finished in the oven).

Mix baby greens and tomatoes in a large bowl. Sprinkle with gorgonzola. In a small bowl, mix oil, vinegar, and lemon juice. Sprinkle in salt and pepper, and whisk until well blended. Pour dressing over the salad mixture, and toss to coat.
